Buchweizen, 30 Minuten einweichen<br \/>\n150 ml passierte Tomaten<br \/>\n300 ml Gem\u00fcsebr\u00fche<br \/>\n200 ml Kokosmilch<br \/>\n1 Handvoll glatte Petersilie, klein geschnitten<\/p>\n<p><strong>Zubereitung:<br \/>\n<\/strong>Zwiebel und Knoblauch in einer Pfanne kurz anbraten. Kreuzk\u00fcmmel, Kurkuma und Currypaste mit dazugeben und kurz anschwitzen. K\u00fcrbis, Kartoffeln und Buchweizen dazugeben und kurz mitbraten. Dann die passierten Tomaten und die Gem\u00fcsebr\u00fche dazu gie\u00dfen und auf mittlerer Stufe ca. 20 Minuten zugedeckt k\u00f6cheln lassen. Ab und zu umr\u00fchren. Dann die Kokosmilch zugeben und weitere 10 Minuten k\u00f6cheln lassen. Zum Schluss die Petersilie untermischen und mit Salz und Pfeffer abschmecken. Guten Appetit!<\/p>\n<p>Praktische Infos:<br \/>\n<strong>Buchweizen<\/strong>\u00a0ist ein sogenanntes Pseudogetreide, reich an Kalium, Magnesium und Selen, was ihn zu einer sehr wertvollen Proteinquelle macht. Aus ayurvedischer Sicht hat der Buchweizen trockene Eigenschaften, was zu einer Erh\u00f6hung des Vata-Doshas f\u00fchren kann. Um dies auszugleichen, den Buchweizen ca. 30 Minuten vorher in Wasser einweichen, oder eine extra Portion Ghee dazu geben.<\/p>\n<p><strong>K\u00fcrbis<\/strong> liefert ebenfalls wichtige Mineralstoffe wie, Kalium, Eisen und Vitamin B. Aus ayurvedischer Sicht hat der K\u00fcrbis w\u00e4rmende, n\u00e4hrende Eigenschaften und gleich das Vata-Dosha aus.<\/p>\n<p><strong>Petersilie<\/strong> geh\u00f6rt zu den wichtigsten Vitamin-C-Lieferanten, ausserdem enth\u00e4lt sie reichlich Kalium, Calcium und Vitamin A.
